1/2 c. Espresso or Dark Coffee
1 T. Vanilla
1/3 c. Sour Cream
1 Egg
1 T. Olive Oil
3 c. Flour
3 T. Sugar
1 t. Salt
2 T. Cocoa Powder
2 1/2 t. Yeast

FILLING:
1 c. Dark Chocolate, chopped

TOPPING:
4 T. Butter, melted
Coarse Sugar

Directions:
1. Combine warm coffee with yeast and a pinch of sugar, let sit for 5 min. to activate.
2. Once yeast is activated, add olive oil, egg & sugar - blend well, then add sour cream & vanilla and blend completely
3. Stir in Cocoa Powder, Salt & enough of the Flour to turn out on to floured counter
4. Knead in remaining Flour to make a soft dough. Place in greased bowl, cover and let raise for 40 min.
5. Roll out into rectangle, divide into 4 strips, cut strip diagonally to make 8 triangles
6. Brush with melted butter and place a tbsp of filling at wide end of triangle - roll into a crescent and place on cookie sheet lined w/parchment paper
7. Cover and let raise for 35 min in warm area
8. Brush each crescent with melted butter & sprinkle w/coarse sugar and bake @ 350º for 12 -15 min. Cool on cookie sheet or serve warm.
