3 cup unbleached ap flour 1/4 cup (1 5/8 oz) Potato Flour 1/4 cup Dry whole milk 2 Tbs sugar 1 1/4 tsp salt 2 tsp instant yeast 1/4 cup unsalted butter (4 Tbs) 1 cup lukewarm water

Topping 1 large beaten egg with 1 Tbs water sesame seeds, poppy seeds and whatever else you want seeds

Combine all dough ingredients and mix and knead by hand or bread machine to make a soft dough.
Place dough into greased bowl, cover and let rise 1 hour in a warm spot or almost doubled in size.
Turn out onto lightly greased surface, gently deflate it, and divide it into 6 pieces. Roll each piece into a ball.
Place the balls into the greased cups of a hamburger bun pan, flattening gently.
Cover and let rise doubled in size, 60-90 minutes. Towards end of rising time, preheat oven to 350 degrees.
Just before baking, brush buns with egg wash and sprinkle tops with seeds.
Bake buns 15-20 minutes or golden brown.
Remove from oven to cool on a rack. Once cooled completely slice for hamburgers!
