1 3/4 cup sugar 1/4 cup water 2 Tbs light corn syrup 6 large egg whites at room temp 1/2 tsp vanilla

1. Heat 1 1/2 cup sugar, water, corn syrup in small pot over med heat, stir occasionally, until sugar is dissolved. Raise heat to med-high, bring to a boil. Cook, washing down sides with a wet pastry brush to prevent sugar crystals from forming, until candy therm reads 230 degrees. Once reaching this temp remove from heat immediately.
2. Meanwhile, with mixer running on med speed, whisk egg whites to soft peaks. Whisk in remaining 1/4 cup of sugar. Reduce speed to med-low, and pour syrup into egg whites in a slow steady stream down sides of bowl. Raise speed to med-high, whisk for 6 minutes. Add vanilla; whisk until soft peaks form about 1 minute. Use immediately.
