2 cans dark red kidney beans
1 can (28 oz) whole or cut up tomatoes
1 large green pepper, seeded and coarsely chopped
1 medium onion, coarsely chopped
1 clove garlic, crushed
1/2 c. finely chopped parsley* * we don't add this
1 1/2 lb. lean ground beef
2 - 3 T. chili powder
1 t. salt
1 t. pepper
1/2 t. cumin seed

Directions:
Drain kidney beans and place in crock pot. Add tomatoes, green pepper, onion, garlic and parsley. In large skillet, saute the beef for about 15 minutes to remove excess fat. Drain and add to other ingredients in crock pot. Season with chili powder, salt, pepper and cumin seed - mix thoroughly. Cover and cook on low setting 8 - 14 hours (on high setting or 4 - 5 1/2 hours).

One hour before serving,, taste for seasoning and add additional chili powder, salt and pepper, if necessary.
