1 pound fresh green beans
6 Roma tomatoes
1 package fresh cheese ravioli
3 cloves garlic, minced
1 bunch flat leaf parsley
8 ounces mozzarella (fresh smoked mozzarella is very good)

Directions:
Directions:
Preheata oven to 400º. Line a jelly roll pan with parchment paper. Slice tomatoes and place on parchment. Drizzle with olive oil. Place in oven to roast 15-20 minutes. While tomatoes are roasting, trim and clean green beans. Steam until tender. Set aside. Bring a large pot of water to boil. Drop in fresh ravioli and cook for 5 minutes. Saute garlic in olive oil in large skillet. Toss in green beans. ravioli and roasted tomatoes with juice. Heat through. Remove from heat and add parsley and cubed mozzarella. Serve.
