Veal Parmasan Recipe

4 3/4 inch thick boneless Veal
1 quart spaghetti sauce Home made or what ever you prefer
2c. flour
2,c Italian bread crumbs
2 eggs
salt and pepper to taste
Fresh Mozzarella cheese 8 slices
2 to 3 tbsp. extra virgin olive oil
1 Large spaghetti squash
If using noodles make for serving of 4

Directions:
Cut Spaghetti squash in half bake at 350 degrees 45 minutes
Cool scarp out spaghetti squash.
If using noodle prepare per directions on box.

Put flour in shallow bowl
Put bread crumbs in shallow bowl
Scrabble eggs in bowl
Salt and pepper veal both sides, dip in flour, egg, and bread crumb in that order.
In pan put oil, and brown veal
Place veal on cookie sheet,
Pour spaghetti sauce over veal, using only half
Top with Mozzarella cheese.

Bake at 325 degrees for 30 -35 minutes

Remove from oven place bed of Spaghetti Squash or Noodles on plate,
Pour spaghetti sauce over noodles, Place veal on top.
Garnish with fresh parsley.

If you like more of a crunch, can substitute Panko for the bread crumbs.
I have used 2 fresh garlic finely chopped and browned in the oil before
browning the veal
