MARINADE
1 cup yogurt
1-2 T lemon juice (I prefer 2)
2 tsp. ground cumin
2 tsp. ground cinnamon
1/4 tsp cayenne pepper (mild, 1/2 medium)
1 tsp ground black pepper
1 T minced fresh ginger
1 tsp. salt (or to taste)
3 boneless, skinless chicken breasts cut into cubes for skewers
4 long skewers

SAUCE
1 T butter
1-2 cloves, garlic, minced
2 tsp. ground cumin
2 tsp. paprika
1 tsp. salt
1 8 oz. can tomato sauce
1 cup heavy cream
1/4 cup chopped fresh cilantro

1 cup Basmati rice

I made the sauce first and then prepared the chicken and grill while it simmered.

SAUCE
Melt butter in a large skillet.

Saute garlic for 1 minute.

Season with 2 tsp. cumin, paprika and 1 tsp. salt.

Stir in tomato sauce and cream.

Simmer 20 minutes and add grilled chickden and simmer for 10 minutes.



GRILLED CHICKEN

In a large bowl, combine yogurt, lemon juice, 2 tsp. cumin, cinnamon, cayenne, pepper, ginger and 1 tsp. salt. Stir in chicken, cover, and refrigerate 1 hour.

Preheat grill for high heat (at least 15 minutes). Lightly oil the grill grate.

Thread chicken onto skewers and discard marinade.

Grill chicken for 10 minutes, turning every couple of minutes so it doesn't burn.

Add to sauce and simmer for 10 minutes.

Serve over rice and sprinkle with the cilantro.
