3 LBS Fresh Jalapeņos
2 Cups Cider Vinegar
6 Cups White Sugar
1/2 Tsp GroundTurmeric
1/2 Tsp Celery Seed
3 Tsp Granulated Garlic
1 Tsp Cayenne Pepper

Directions:
Directions:
- Slice the jalapeņos into uniform 1/8 to 1/4 inch rounds; set aside
- In a large pot bring cider vinegar, sugar, and spices to a boil. Reduce heat and simmer for 5 minutes.
- Add pepper slices and simmer for exactly 4 minutes. Use slotted spoon to remove peppers and transfer into sterile canning jars (pint) to within 1/4 of upper rim of jar.
- Turn heat up and boil the syrup at a hard boil for 6 minutes
- Use a ladle to fill the jars with the peppers in them to 1/4 inch of the top.
- Wipe rims and add lids. Tighten fingertip tight and process in hot water bath for 10 - 15 minutes.
- Allow to mellow for 2 weeks to one month before eating, they get better in that time period.
