3 Eggs
1 Cup Oil
2 Cups Sugar
2 Cups Grated, Peeled Zucchini
1 tsp Vanilla Extract
3 Cups Sifted Flour
1 tsp Salt
1 tsp Soda
2 tsp Cinnamon
1/4 tsp Baking Powder
3/4 Cup Chopped Nuts (optional)

Directions:
Directions:
Beat eggs until light and foamy.
Add oil, sugar, grated zucchini and vanilla.
Mix lightly but well.
Add flour, salt, soda, cinnamon and baking powder sifted together.
Mix until blended.
Stir in chopped nuts (optional).

Pour batter into two greased 9x5x2" loaf pans.
Bake at 325º for 1 hour or until bread tests done with toothpick.
Let set on cooling rack for 10 minutes.
Remove from pans and cool on rack.
