Ingredients: 1 lbs penne pasta 3 tablespoons extra-virgin olive oil, divided 1 lbs Italian sausage 1 lbs baby Portobello mushrooms, sliced 3 cloves garlic, minced 2 cups heavy cream ¼ teaspoon salt, or to taste ¼ teaspoon black pepper ½ cup grated Parmesan cheese 1 8oz package shredded mozzarella cheese

Directions:1. Preheat the broiler and set the oven rack about 6 inches from heat source 2. Bring large pot of lightly salted water to a boil; cook penne as directed on box 3. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Cook and stir the sausage in the oil until crumbly and no longer pink, about 7 minutes. Remove from skillet, leaving fat in pan, and set aside. 4. Pour remaining 2 tablespoons of olive oil into skillet and add the mushrooms and garlic. Cook and stir until mushrooms have browned and begun to release their liquid, about 5 minutes. 5. Return sausage to the skillet and pour in heavy cream. Season with salt and pepper and return to simmer, cooking until the sauce begins to thicken, about 5 minutes. 6. Pour sauce over pasta and stir in a 9x13 pan. Sprinkle with mozzarella cheese. Broil until cheese is bubbly. About 5-7 minutes. |
