2 tsp salt
1/3 cup oil
1/3 cup honey
2 eggs
2 cups warm water
7 cups unbleached flour *can replace 1 cup of the flour with 6 TBS of soy flour, 6 TBS powdered milk, 2 TBS wheat germ

Directions:
Have all ingredients at room temperature. Put first six ingredients and 2 cups of flour in mixer. Beat 5-10 minutes at medium seed. Remove beaters. By hand stir in 2 cups of flour. (No need to make dough smooth.) Sprinkle 1 cup flour in circle on kneading surface. Turn out dough onto the floured kneading surface. Oil your hands and knead with fingertips until dough stiffens up and isn't sticky. Knead 5 - 10 minutes or until dough is smooth and elastic. Let rest 20 minutes. Punch down and roll out two loaves. Roll up to a loaf sealing well. Place seamed side own in greased pan and brush with oil. Cover with plastic wrap and refrigerator 2-24 hours. About ten minutes before baking preheat oven to 350 degrees and remove dough from refrigerator. Puncture air bubbles with toothpicks an bake 40-50 minutes.
