7 SWEET GREEN PEPPERS
1 JALAPENOS
1 1/2 CUPS CIDER VINEGAR, DIVIDED
1 PKG. POWDERED PECTIN
5 CUPS SUGAR
11/2 CUPS APPLE JUICE
1/2 TSP. SALT
GREEN FOOD COLORING

Directions:
To prepare juice : wash peppers, remove stems and seeds. Cut peppers into 1/2 inch pieces.
Puree the peppers and vinegar.
Combine puree and Apple juice in large bowl, cover and refrigerate over night.
Then strain thru a damp jelly bag or several layers of cheesecloth.
Measure 4 cups juice. Add Apple juice to make 4 cups juice if needed.
To make jelly: Combine juice, powered PECTIN and salt in large saucepan.
Bring to a boil over high heat, stirring constantly.
Add sugar, stirring until dissolved. Return to rapid boil.
Boil hard 1 minute, stirring constantly.
Remove from heat, stir in a few drops of food color.
Pour in hot jars and seal.
Boil in water bath 10 minutes. Makes 6 1/2 pints.
