1 tbsp olive oil
1 small onion, diced
3 cloves garlic, diced
1 can (28 oz) crushed tomatoes
1/4 cup chopped basil
1/4 tsp salt
1/4 tsp black pepper
8 eggs
4 oz mozzarella
topping: 1/4 cup chopped basil

Directions:
Directions:
In a deep skillet, heat olive oil over medium heat. Stir in onion and garlic, cook 3 minutes. Pour in 1 can crushed tomatoes, basil, salt and black pepper. Reduce heat to low and simmer 5 minutes.

Crack 8 eggs into sauce and scatter cheese on top. Bake at 400ºF for 8 minutes, until egg whites are set. Sprinkle another 1/4 cup chopped basil on top. Serve with crusty bread.
