8 large potatoes
3 hard boiled eggs
1 onion, chopped
1/2 cup chopped celery
1/2 cup chopped cucumber
1/4 cup chopped radish
Dressing:
2 cups Miracle Whip
1-1/2 tablespoons yellow mustard
1 cup sour cream
5 tablespoons sugar
2-1/2 tablespoons white vinegar

Directions:
Directions:
Boil the potatoes until just tender, don't overcook, drain, cool, peel and dice. Peel the eggs and dice all but one. Add the potatoes, diced egg, onion, celery, cucumber, radish and salt and pepper to taste.
Mix the dressing ingredients and fold into potato vegetable mixture. Top the salad with sliced hard boiled egg and sprinkle a little paprika on top.

This is my mother Marie Polzin Quade's recipe that was served at all the family 4th of July picnics on the farm when we were kids. Mom would triple the recipe and it would be gone before we knew it.
