1 1/2 cups (3 sticks), softened
1 cup sugar
1 egg
3/4 cup shredded coconut, very fine
1 teaspoon vanilla extract or coconut extract
1 teaspoon baking powder
3 1/4 cups all-purpose flour

Directions:
Directions:
Preheat oven 375. Cream butter and sugar, beat in egg, coconut and vanilla, until fluffy. Sift flour and baking powder and add to butter mixture. Mix just until combined. Choose design for cookie press and fill with dough. Press onto ungreased cookie sheet. You can decorate prior to baking. Bake 10-12 minutes or until edges are light brown. Cool 2 minutes. These freeze well.
