2 lb. unpeeled medium fresh shrimp
1/2 cup minced onion
1/3 cup butter, melted
1/3 cup all purpose flour
1 can chicken broth
curry powder
1 - 1/2 cup milk
1/2 tsp. salt
sugar
1/4 tsp. ground ginger
1 tbsp. lemon juice
2 cups hot cooked rice

Directions:
Directions:
In a Dutch oven, bring 6 cups water and 1 tbsp. salt to boil. Cook shrimp until pink, 1 to 2 minutes. Drain and rinse. Peel and devein and set aside. Saute onion in butter until crisp tender. Add flour and curry powder, stirring until smooth. Cook 1 minute stirring constantly. Gradually add chicken broth and milk while cooking over medium heat. Stir until thick and bubbly. Stir in salt, sugar, ginger and lemon juice. Add shrimp and cook over medium heat until hot.
Serve over rice with any condiments you choose, peanuts, sliced green onion, raisins, toasted coconut and banana chips.
