1 1/2 c very ripe bananas
2 tsp lemon juice
3 c all purpose flour
1 1/2 tsp baking soda
1/4 tsp salt
3/4 c soft butter
2 c sugar
3 eggs
2 tsp vanilla
1 1/2 c buttermilk (or milk soured with 1 tsp vinegar or lemon juice)

Icing

1/4 c softened butter
8 Oz room temp cream cheese
1 tsp vanilla
1 1/2 c powdered sugar

Directions:
Preheat oven to 275 (yes 275), gas and flower a 9x13 pan.

Mash banana and mix with lemon juice, set aside

In medium bowl mix flour, baking soda, and salt. Set aside

In large bowl cream butter and sugar. Beat in eggs, one at a time. Stir in vanilla.

Beat in flour mixture alternating with buttermilk. Stir in bananas.

Pour in pan and bake 1 hour and 10 minutes (or until knife come out clean)

Immediately place in freezer for 45 minutes...do not skip this step. (If not completely cool upon removal from freezer, cool completely before icing)

Icing

Cream butter and cream cheese. Beat in vanilla and powdered sugar on low until combined, then high until smooth.

Frost and enjoy!!
