1 doz. medium sized squash
6 medium green bell peppers
6 medium onions
1 or 2 hot peppers (optional)
1/2 cup salt
4 cups sugar
4 cups apple cider vinegar
3 tbsp. celery salt
5 tsp. dry mustard
3 tsp. turmeric

Note: May substitute 1 red pepper for a green, for 'pretty'.
Chop vegetables fine with food processor or grind with coarse blade. Put chopped vegetable mixture in large pan; add 1/2 cup salt. Cover with water and one dozen ice cubes. Let stand 1 hour. Drain, rinse and drain again, (Pour in colander and squeeze.) In a large pot, (Dutch oven), combine sugar, vinegar and spices; boil 3 minutes. Add the vegetable mixture. Cook over medium heat, stirring for 10 minutes. Spoon into hot jars, seal and process in hot water bath 5 minutes or longer.
Makes 7- 1/2 pints.
