5 to 6 lb. chicken
1/2 cup chopped onion
1 cup chopped celery
1/2 cup chopped bell pepper
1/4 cup diced pimento
3/4 lb. grated sharp cheese
1 lb. small spaghetti
1 quart white sauce
1/4 lb. butter
1/2 cup flour
1 qt. milk or half and half broth
1 tsp. salt and pepper

Directions:
Melt butter, stir in flour. Add milk, stir until smooth and thickened. Cook chicken until tender. Cut into bite sized pieces. Cook onion and celery in broth until tender. Cook spaghetti in broth. Add 1/4 cup melted butter to one cup bread crumbs and set aside. Combine chicken, onion, celery, pimento, white sauce, spaghetti and cheese. Spray 2 (9 /x 16 inch), Pyrex dishes and pour mixture into dishes. Top with buttered crumbs.
Bake at 350º F for 30 minutes.
