Ingredients: 1 1/2 to 2 lb. shrimp 2 -3 T. Cajun seasoning or Old Bay 1 c. stone ground white grits 2 c. water 2 c. half and half 1 T. minced garlic 2-3 T. flour 2 c. chicken stock 1/2 c. heavy cream 1 t. Worcestershire sauce hot sauce-Texas Pete or Tabasco 3 slices bacon, chopped 1/4 -1/2 lb. andouille sausage, chopped chopped chives for garnish

Directions:Peel and devein shrimp, then combine with cajun seasoning or Old Bay in small bowl. Set aside. For grits, bring 2 c. half and half and 2 c. water to a boil. Slowly add grits whisking often. Cook grits 20-30 minutes stirring often. Add more cream or water if needed.
For shrimp sauce, cook bacon until crispy and remove from pan. Drain and set aside. Add andouille sausage and cook 1-2 minutes. Saute shrimp and garlic in bacon grease turning once for about 3 minutes just until shrimp are tender. Remove from pan and set aside. Add flour to pan and stir to make roux. Cook 10 minutes then add 1 to 1 1/2 c. chicken stock and 1/2 c. whipping cream. Whisk together until smooth and reduce until slightly thickened. Add Worcestershire sauce and hot sauce to taste.
To serve: place spoonfuls of grits into bowl, top with shrimp. Drizzle shrimp sauce over top of shrimp. Top with crispy bacon and chives. |
