Roasted Cauliflower Recipe

1 head cauliflower
1/2 c olive oil
1/2 pkg Ranch Dip (optional)
herbs of your choice

Preheat oven to 400 º
Prepare the cauliflower head by removing leaves and cutting away as much of the woody core as you can without releasing the florets from the head.
Place the cauliflower head in an oven proof pan or baking dish. I use a cast iron skillet and it works beautifully.
In a small bowl or ramekin, combine your choice of herbs with the olive oil. You can use the ranch dressing with Italian herbs and parmesan, or give it an Asian feel with ginger and hot pepper flakes. Or try a Latin taste with cumin and chili pepper.
Brush the herbed olive oil on the cauliflower. Be generous.
Place in the oven uncovered for 40 minutes until the cauliflower is tender.
