1 c. packed brown sugar
1/2 c. sugar
3/4 c. vegetable shortening
1/4 c. water
1/2 tsp. baking powder
3 c. old fashioned oatmeal
1 egg
1 tsp. vanilla extract
1 c. all purpose flour
1 tsp. salt

optional: add raisins or chocolate chips

Directions:

-Preheat oven to 350 degrees
-Lightly grease cookie sheets
- Beat sugars, shortening, water, egg, and vanilla until creamy
- combine oats, flour, baking soda and salt; add to shortening mixture. mix well
- drop by rounded teaspoons on cookie sheet
- Bake for 12-14 minutes or until light golden brown.
-Let stand for 1 minute before removing to rack to cool.
