1/2 cup shortening
1/2 cup soft butter
2 cup brown sugar
2 eggs
1/2 cup water
1 tsp. vanilla
4 cup flour
1½ tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 cup moist shredded coconut

Directions:
Directions:
In a large mixing bowl thoroughly mix the first 4 ingredients. Stir in water & vanilla. In another bowl sift flour, baking powder, soda & salt. Stir into butter mixture & mix thoroughly. Stir in coconut & chill two hours. Preheat oven to 400º. Ovens vary & you may need to adjust according to your oven, or try a sample. Roll cookie dough into walnut size pieces, press into triangular shape with fingers. Press with times of floured fork to create washboard effect. Bake 8-10 minutes or until lightly brown. Do not over bake.

These cookies were named after the old-fashioned washboards used to hand wash clothes before the invention of the washing machine. They are a tasty coconut cookie flattened with the tines of a fork to give them the ridges of a washboard.
