Sauce:
1/2 c ketchup
4 tsp soy sauce
1/2 tsp salt
2 tbsp worcestershire sauce
3 tbsp white sugar
1 tsp sesame oil
1/2 c low sodium chicken broth

The Rest:
2 tbsp corn starch
1/2 tsp white sugar
3 whole boneless skinless chicken breasts (cut into 3/4" cubes)
1/4 c canola oil
1 tsp fresh ginger (minced)
3 cloves garlic (minced)
1 small onion (chopped)
1 red bell pepper (cut into 1" pieces)
3 carrots (peeled and sliced thinly)
1 c snow peas (washed and destrung)
1 1/2 c unsalted cashews

Directions:

Combine sauce ingredients and set aside. In separate bowl combine cornstarch, sugar and pinch of salt. With paper towel, blot chicken until dry. Combine chicken with cornstarch mixture until coated. Heat oil in frying pan on medium to medium high heat until hot, not smoking. Add chicken mixture, ginger, garlic and onion to oil. Let sizzle for 1-2 minutes. Don't mix. After 1-2 minutes take a spatula and mix well. Add in carrots and stir together. Place lid on top and let cook on medium for 3 minutes. Take lid off and add peppers, snow peas and mix. Add cashes. Add sauce. Let for sit for 2 minutes with lid off. Remove from heat, serve over rice.
