4 slices bacon, diced
1 lb thinly sliced red potatoes
1 small diced red onion
1 tbsp chopped rosemary
6 eggs
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
arugula salad (optional)

Directions:
Directions:
In an ovenproof nonstick skillet, cook 4 slices diced bacon over medium heat 5 minutes. Transfer to a paper towel with a slotted spoon. Reduce heat to medium-low, add red potatoes, red onion, and rosemary. Cover and cook 10 minutes, until potatoes are tender.

Whisk eggs, milk, salt and black pepper in a bowl. Pour over potatoes and stir in bacon. Bake uncovered at 350ºF for 10 minutes, until set. Slice and serve with arugula salad.
