1 c. butter or margarine, softened
1 c. firmly packed brown sugar
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1 tsp. cinnamon
3 c. Quaker Oats (quick or old fashioned )
1 c. or small pkg. chocolate chips.
1 c. walnuts (optional)

Directions:

Preheat oven to 350º
1. Beat together margarine and sugars till creamy.
2. Add eggs and vanilla, beat well.
3 Add combined flour, baking soda, cinnamon and salt; mix well.
4. Stir in Oats. This gets very thick.
5. Add in Chocolate chips and optional nuts.
6. Drop by rounded tablespoons onto ungreased cookie sheet.
7. Bake 9 to 12 minutes or until golden. Don't overcook if you want softer cookies.
8. Cool a minute on cookie sheet; remove to wire rack.

This makes about 4 dozen cookies. I've been making these cookies since I first got married. You can substitute the chocolate chips with raisins or craisins, or leave them out entirely for plain Oatmeal cookies.
