1 c. milk
1/4 c. butter, margarine or oil
1 egg
1 c. flour
1 1/4 c. yellow corn meal
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt

Preheat oven to 400º.
In medium bowl add all dry ingredients and stir together. In separate small bowl beat all wet ingredients together with whisk or mixer. Add the wet ingredients to the dry ingredients and mix till just blended together. Pour into a well greased (or use non-stick spray) 10" round cast iron skillet. If a cast iron skillet is unavailable, use a round or square cake pan. Bake for 20-25 minutes. Should be golden brown on the top and when a toothpick is inserted it should come out clean.

For a nice crust on the outside, I heat the skillet for about 5 minutes in the oven before pouring in the cornbread batter. This is my favorite cornbread recipe.
