Fruit Filling:
3 cups Rhubarb (washed and sliced in 1/2" pieces)
2 cups Strawberries (washed and sliced)
1 cup Blueberries (washed)
1/2 cup Sugar
2 T. Corn Starch

Batter:
1 cup Flour
1 t. Baking Soda
1/4 t. Salt
1 Cube Butter (room temp)
3/4 cup Sugar
2 Eggs
1/2 cup Applesauce (or yogurt)
1 t. Vanilla

Directions:
Directions:
1. Toss Rhubarb and berries with sugar and cornstarch. Set aside.

2. Mix Batter ingredients together in a bowl.

3. Pre-heat oven to 350°

4. Mix all ingredients of batter together in a bowl, mixing til well combined.

5. Pour fruit into baking dish (I use cast iron skillet).

6. Spread batter mixture over top of fruit in skillet.

7. Bake in 350° oven for 30-40 minutes. (or until tooth pick comes out clean)

8. Let cool for 20 minutes before inverting onto a serving plate.
