5 chicken breasts
3 cans various beans of your choice, drained
2 cans fire roasted tomatoes
1 medium yellow onion, diced
1 red bell pepper
2 cans green chilies
2 packets McCormick's white chicken chili seasoning (must have)
1 12oz. beer ( I use New Castle) or 1 1/2c chicken stock

Set crock pot to low:
Place chicken breasts in bottom of pot. Begin adding rest of ingredients in no particular order. Once all ingredients are in the pot, stir ingredients together while leaving the chicken on the bottom undisturbed. Cook on low for 8 hours, occasionally. Use a long serving spoon(s) to break apart chicken until its shredded and without big chunks. Serve with cornbread tortilla chips, sour cream, shredded cheese of choice ( I like sharp Cheddar), olives, hot sauce/salsa of choice, diced yellow onion, cilantro. Amazing comfort food, and easy to make.
