1 lb. Ground Beef, browned and drained
2 TB Capers or 4 green olives chopped
4 oz. Chilies, Hatch diced, fresh or canned will work
1/4 tsp garlic powder
8 oz. Tomato sauce, save can to mix the water and flour in
4-6 slices of jalapeno, finely chopped
2 TB finely minced onions

1 Tsp Sugar
2 TB Flour
3 TB Water
Mix this in the tomato sauce can

4 Pillsbury pie crust dough - room temp

Directions:
Directions:
Brown ground beef, drain.
Place back in pan, then add the capers or green olives, chilies, garlic powder and jalapenos. Heat till bubble.
The use the tomato sauce can and mix the sugar, flour and water together to make a slurry, add to the hot bubbling hamburger mixture and stir until thickened.
Remove from heat.

Roll out pie dough, cut out 5 inch circles (use small bowl)
Add 2-3 TB of hamburger mixture to pie dough, use water to go around edges to seal, fold in half, and crimp edges with a fork.

Place on sheet pan lined with no stick foil, and freeze until solid.
Remove and wrap each individually in foil, place in zip lock baggie.

Unwrap empanada, place frozen empanada on foil lined sheet and bake
425º for about 15 minutes until golden brown

My dearest friend Jo Pinkstaff learned how to make these when she and her husband Jimmy was stationed in Panama during the war. She shared this special recipe with me and has been a family favorite. Great with a side of Spanish rice and topped with a spoonful of green chili stew and a dollop of sour cream. If you like spicy, then make as is but if you don't like so spicy they don't use all the jalapenos.
