2 tbs olive oil
1 lg onion, chopped
4 garlic cloves, minced
2 lbs ground chicken
1 tsp salt plus more for seasoning
2 tabs ground cumin
1 tabs ground cumin
1 tabs fennel seeds
1 tabs dried oregano
2 tsp chili powder
3 tabs flour
2 cans cannellini or other white beans, drained
1 bunch swiss chard, stems removed and chopped
1-1/2 cups frozen corn
4 cups chicken stock
1/4 tsp crushed red pepper flakes
1/2 cup grated parmesan cheese
1/4 cup fresh flat leaf parsley

Directions:
Directions:
In a heavy bottomed Dutch oven, heat oil and add onion. Cook until translucent. Add garlic and cook. Add ground chicken and spices stirring frequently until chicken is cooked through. Stir the flour into the chicken mixture and add the beans, chard, corn and chicken stock. Bring the mixture to a boil then reduce heat. Simmer 30 minutes. Top with parsley.
