2 eggs, beaten
1.5 cups tomato juice
1 tablespoon minced onion (usually use dried)
1 celery rib
1 cup seasoned bread crumbs
1⁄2 envelope onion soup mix, sometimes use less
1⁄2 teaspoon pepper, to taste
1 teaspoon salt, to taste
2 pounds ground beef 80/20
1⁄2 cup ketchup (Topping)
1⁄4 cup packed brown sugar (Topping)
3 tablespoons mustard (Topping)

Directions:
Directions:
Mix bread crumbs, eggs & tomato juice. Chop (in food processor) celery. Mix celery, onion, salt, pepper, beef & soup mix in with mixture. Bake in greased loaf pan or muffin pan. Bake at 350* uncovered for 45 minutes or until juices run clear or meat thermometer reads 160*.
Topping (ketchup, brown sugar, mustard): Spread on meatloaf after baked. Return to oven for 10-15 minutes.

Meatloaf is difficult to cook through--I typically bake it in muffin pan as mini meatloaves. Great for the freezer as well.

The only meatloaf I have ever liked. Tillie January made this for Altapass Campmeeting every year & when I became a mom, she gave me the recipe. She said she always "eyeballs" it, but she guessed and I think it's great! Another winner for our family's table.
