1 c. wild rice
3 chicken breasts (I particularly like bone in and skin on, for more flavor, but boneless works too)
2 stalks chopped celery
1 medium chopped onion
2 large finely chopped carrots
1 (4 oz) package sliced mushrooms
1 (48 oz) chicken stock
1 tsp thyme
1 tsp sage

For thicker, creamery version of soup add
1/2 c. butter
3/4 c. flour
2 c. milk

Rinse and drain uncooked wild rice, then transfer to a slow cooker. Add chicken, celery, onions, carrots, mushrooms, chicken stock and seasonings, Cover and cook on LOW for 7 to 8 hours.

When cooking is nearly finished, melt butter in a saucepan over medium heat. Add flour and let the mixture bubble for approximately 1 minute. Slowly whisk in milk to form a thick and creamy mixture.

Remove chicken from slow cooker. Remove skin and bone and shred or chunk as desired. Add back into slow cooker. Add skillet mixture, stir and serve. Garnish with chopped scallions if desired.
