1 egg white
1 tsp. cold water
2 c. whole almonds
3 tbsp. white sugar
3 tbsp. brown sugar
1 tbsp. ground cinnamon
1/4 tsp. salt

Directions:
Directions:
Preheat oven to 250º. Beat egg white and water until frothy with a whisk in a medium bowl. Add the almonds; stir until well coated. Mix the sugars, salt, and cinnamon together and sprinkle over the nuts. Stir the nuts until well coated. Spread almonds evenly on a baking sheet lined with parchment paper or silpat.

Roast almonds in oven for 1 hour, stirring every 20 minutes or so. DO NOT OVERCOOK. It makes the house smell amazing. Allow to cool and store in airtight containers or Ziploc bags.
