Beef tenderloin (bite size or dinner size, your preference)
Puff pastry

Duxelle:
4 mushrooms, chopped fine
1 large shallot, chopped fine
2 tbsp. butter, sautéed
1/2 cup red wine, reduce down till almost dry
1/4 tsp. granulated garlic
1/4 cup bread crumbs

Directions:
Directions:
Mix all the duxelle ingredients together and saute.

Brown meat on all sides, let cool. Roll puff pastry out, lay flat. Add duxelle and beef. Wrap. Bake at 350º until dough has browned.
