2 cups all purpose flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
2 cups sugar
1 cup vegetable oil
4 large eggs
4 to 6 large carrots ( 2 cups shredded)

Cream Cheese Frosting
1/2 cup (1 stick) butter
one 8 oz. package cream cheese
1 pound powdered sugar
2 tsp. vanilla extract
1 cup pecans, chopped fine. Extra for garnish

Directions:
Directions:
Sift together flour, salt, baking powder, baking soda and cinnamon. Set aside.
With electric mixer, beat together the sugar and oil. Then add eggs and mix until well combined.
Add the dry ingredients and mix until smooth.
Add the carrots and mix until they are completely incorporated.
Pour into a well greased bundt pan.
Bake at 350º for 40 to 45 minutes.

Cream Cheese Frosting
Mix the butter and cream cheese with electric mixer.
Add the powdered sugar and the vanilla.
Mix until the icing is light, fluffy and smooth.
Add the pecans.
Wait until the cake is completely cooled before frosting.
