Ingredients: 8 graham crackers 1/3 C packed dark brown sugar 2 1/2 Tbsp butter, melted 3/4 tsp salt 14 oz semi-sweet chocolate, finely chopped 2 C heavy cream 2 large eggs, at room temperature 1 10-oz bag mini-marshmallows

Directions:Preheat oven to 350. Spray a 9x13 casserole dish with cooking spray.
In food processor pulse the graham crackers until finely ground. Add the brown sugar, butter and 1/2 tsp of the salt and process until well combined. Press the crumb mixture into the bottom and up the sides of the prepared casserole dish. Bake for 10 minutes then let cool completely.
Put the chocolate in a large, heatproof bowl and set aside In a large, heavy saucepan set over medium-high heat, bring the cream just to a boil, about 5 minutes. Pour the hot cream over the chocolate. Let it stand for 1 minute, then gently whisk until the chocolate is melted and the mixture is smooth. Gently whisk in the eggs and the remaining 1/4 tsp of salt until combined. Pour the filling into the graham cracker crust. It will fill the crust about halfway.
Bake for about 25 minutes, or just until the center becomes slightly firm. Let cool for 10 minutes.
Preheat the oven to broil.
Cover the entire top of the casserole with the marshmallows. Don't let any brown peek through. Put the marshmallow covered casserole back in the oven 3-4 inches from the heat and broil -- rotating casserole as necessary until the marshmallows are golden brown about 3 minutes. Watch this step very closely as they can go from brownsed to burned in a second Allow to cool for 10 minutes before serving.
Store in an airtight container in the refrigerator for up to 1 week. |

Notes: This thing is amazingly rich, smooth, and decadent. Better than a real s'more because it's not as messy and you don't have to start a fire. (Well, Ric did have a marshmallow beard after the first bite...) The mouth-feel of the chocolate layer is extraordinarily silky. You could probably serve 15 people with one pan of these. Cut them small and present them with some flair. If you want to go crazy, make homemade marshmallows, and use imported German chocolate. But exactly as written, this is a fine thing.
