4 ears of sweet corn, shucked
one 8 oz. package of cream cheese
1 cup sour cream
4 green onions, sliced
4 oz. Cheddar Cheese
4 oz. Monterey Jack Cheese
4 oz. Queso Fresco or cotija cheese
1 tsp. ground cumin
1/2 tsp. paprika
1/4 tsp. cayenne pepper, more to taste
salt and pepper to taste
several dashes of hot sauce (Tabasco)
juice of 1 lime

Directions:
Directions:
Roast corn on grill or over stove burner using tongs.
Slice the kernels off the cob when cool.
Mix the cream cheese, sour cream and onions using an electric mixer.
Add the cheeses to the bowl and mix well.
Add the cumin, paprika, cayenne, salt and pepper and lime juice and hot sauce. Stir,
Add the corn and mix until combined.
Chill at least 2 hours, or overnight.
