1 pint crushed pineapple
1 cup sugar
1/2 box Knox gelatin
1/2 cup cold water
1/2 cup boiling water
1 cup sugar
1 pt. whipping cream, whipped

Directions:
Directions:
Cook the pineapple and sugar for 10 minutes. Soak the gelatin in cold water for 1/2 hour, then add the boiling water and strain that mixture into the pineapple mixture. Add the next cup of sugar and cool. When the mixture is cold, and begins to set, add the whipped cream. Chill.

This recipe is from Mother's old, old brown cookbook that she probably started when she got married, or before. It used to be my favorite and she seldom made it, so it was a real treat when she did.
