2 cups flour
pinch of salt
1 cup sugar
1 egg
1 1/2 tsp. baking powder
1 Tbsp. lemon juice
1 1/2 tsp. lemon rind
1/2 cup butter

Directions:
Directions:
Sift flour, salt, and baking powder. Cream butter, lemon rind, and sugar. Add egg and beat. Add lemon juice and flour. Shape into a roll, wrap with waxed paper and chill. Slice and place on ungreased baking sheet. Bake at 400º for about 10 minutes.
