2 cups - Sifted Flour
2 tsp - Baking Powder
1 1/2 tsp - Baking Soda
1 tsp - Salt
2 1/2 tsp - Cinnamon
4 eggs
1 1/2 cups - Oil
2 cups - Sugar
2 3/4 cups - Grated or Shredded Carrots
1 - 8oz can drained Crushed Pineapple
3/4 cup - Chopped Walnuts
1 cup - Shredded Coconut

FROSTING:
1/2 cup - Butter
1 - 8oz package Cream Cheese
1 1/2 tsp - Vanilla Extract
1 - Pound 10X Sugar

CAKE INSTRUCTIONS:
Sift together flour, baking powder, baking soda, salt and cinnamon. In large bowl mix sugar, oil, and eggs. Add flour mixture a little at a time, mixing well after each addition. Add carrots, drained pineapple, nuts and coconut. Blend thoroughly. Pour into 2 greased and floured cake pans or a 9x12 greased and floured pan. Bake at 350º for 35-40 min or until tooth pick inserted in center of cake comes out clean. Let cool 10 minutes before removing from pan. Cool cake completely before icing.

FROSTING INSTRUCTIONS:
Soften butter and cream cheese. Cream together butter, cream cheese and vanilla. blend in 1/2 lb of 10X sugar. Continue adding 10X sugar until frosting is desired consistency and sweetness. (you may not use the full pound) If frosting is too thick, thin with teaspoon of milk.
