2 lb. potatoes, peeled and sliced very thin
1 T olive oil, or as needed
Ground nutmeg
Ground black pepper
1-2 garlic cloves, minced
Salt
Shredded Parmigiana or Gouda (optional) to taste

Pat potatoes dry.

In large sauté pan (I prefer cast iron)' combine oil, nutmeg and pepper to taste.

Starting at center, arrange potato slices in closely overlapping spiral. Add some salt, nutmeg and pepper to taste.

Sprinkle with shredded cheese if desired.

Repeat spiral for a second layer. And more salt, pepper and nutmeg.

Place pan over medium heat and cover. Cook potatoes until well browned, about 15 minutes, occasionally shaking pan to avoid sticking.

Press potatoes down flat with a spatula and remove from heat.

Place a larger platter over pan and flip it upside down, transferring potatoes to the platter.

Add more oil to pan if needed and slide potatoes, raw side down, into pan.

Cover and cook until well browned, about 15 minutes.
