2 lbs. ground beef
1 onion, chopped
5-6 cloves garlic, chopped
2 cans mild chili beans
3-5 diced tomatoes (depends on how many you like)
1 can mild green chiles
1 package chili seasoning
46 oz. can tomato juice
1/2 c. brown sugar
2 T. cocoa powder
1/2 T. cumin
salt to taste
pepper to taste
chili powder to taste
2-3 T. corn starch (if you want to thicken it up some)

Saute the onions and garlic in a bit of oil for about 5 minutes. Brown the ground beef with the sauteed onions and garlic, then drain off the excess fat. Mix all ingredients in a large pot and simmer 6-8 hours. Serve with peanut butter sandwiches, cheese, and a big cold glass of milk.

This is my husband, Jason Settle's chili recipe. It took him a few years to get it just right, but was worth the wait! It's thick and sweet, with just a little heat. When Jason makes this chili he uses a cast iron pot, the only thing that makes it taste better is when he cooks it outside over the fire. The more days it can sit in the refrigerator the better it gets, but we rarely have leftovers from this recipe very long.
