3 T. butter
6 medium onions (about 2 lbs.) thinly sliced
2 lbs. of beef for stew, cut into chunks
1/4 c. paprika
1 and 1/2 tsp. salt
8 oz. sour cream
4 c. buttered, cooked noodles

Directions:
In 5 qt. dutch oven lightly cook onions over medium high heat in butter until browned. Add meat, paprika, and salt. Reduce heat to low; cover and simmer 1 and 1/2 to 2 hours until meat is fork tender. Stir in sour cream, heat throughout, but do not boil. Serve over noodles.

My Mom, Cindy Irwin, found this recipe in a Good Housekeeping magazine years ago. It's great served over noodles as suggested, but it's also great served over rice, or Gigi's Cheesy Potato Casserole, which is included in this cookbook.
