9 cooked lasagna noodles (I use uncooked gluten free)
1 lb. lean ground beef
1 (1 1/4 oz.) envelope Old El Paso Taco Seasoning
3/4 cup of water
1 (15 oz.) ricotta cheese
1 (4.5 oz.) can chopped green chilis
2 eggs
1 (30 oz.) jar of spaghetti sauce
2 tsp. cumin
1 (9 oz.) frozen corn
1 can (15 0z.) black beans drained and rinsed
12 0z. (3 cups) shredded Monterey Jack Cheese

Heat over to 375. Spray 9 X 13 casserole dish with Pam.
*In large skillet brown ground beef. Drain. Add taco seasoning and water. Simmer 5 minutes until thickened.
*In small bowl combine ricotta cheese, chilis, and eggs. Mix well. In medium bowl combine spaghetti sauce and cumin.
*To assemble, place 3 lasagna noodles in baking dish. Spoon and spread 1/3 of ricotta mix over noodles, top with 1/3 of beef mixture, corn, bean, sauce, and cheese. Repeat 2 more times.
*Backe at 375 for 40-50 minutes.
