2/3 cup flour
1 cup vegetable oil
1 large green pepper, chopped
1 large red pepper, chopped
2 cups celery, chopped
2 large onions, chopped
2 15-oz cans tomato sauce
1 10-oz can Rotel tomatoes & green chilies, mild
2 cups chicken stock
2 tbsp. worcestershire sauce
2 tsp. garlic powder
2 tsp. paprika
2 tsp. salt
1 1/2 tsp Creole seasoning
1 tsp. lemon juice
26 oz. Hardwood Chicken Sausage, sliced (Hillshire Farms)
6-12 oz. Perdue chicken strips, diced
Hot steamed rice

Directions:
Directions:
In a heavy pan, whisk flour and oil until smooth. Cook over medium-high heat for 5 minutes; whisking constantly. Reduce heat to medium and cook for 10 minutes longer until reddish-brown.
Add peppers, onions and celery; cook and stir for 5 minutes. Add tomato sauce, chicken stock, worcestershire sauce, garlic powder, paprika, salt and Creole seasoning. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add chicken, sausage and tomatoes and heat through. Serve over steamed rice.
