2 tbsp. butter
2 tbsp. salad oil
1 medium onion finely chopped
1 medium green pepper, cut in chunks
1 clove garlic minced
1 c uncooked rice
1 (28 oz) can tomatoes coarsely chopped
1/3 c white wine
1 tsp chili powder
1/4 tsp salt
1/4 tsp thyme
1/4 tsp basil
1/8 tsp paprika
freshly ground black pepper
2 c Maple Leaf Ham cooked and diced
1 (5 oz) can clams drained (optional)

Directions:
Directions:
Heat butter and oil in ovenproof casserole dish on top of stove. Saute onion, green pepper and garlic until onion is translucent. Add rice and stirfry for 3 to 5 min. Stir in tomatoes and wine. Mix together seasonings and add with Maple Leaf Ham to tomato mixture. Bring to a boil. Cover and bake in a 350ºF oven for 15 min. Sir in clams and continue baking covered for an additional 10 min. Garnish with chopped parsley.
