1 1/3 c Five Roses Unbleached Flour
1 c cornmeal
1/2 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
8 slices crumbled cooked bacon
1 beaten egg
1 1/2 c undiluted Darnation Evaporated Milk
4 tsp vinegar
1/3 c melted butter or bacon drippings
maple syrup

Directions:
Directions:
In a large bowl combine flour, cornmeal, sugar, baking powder, baking soda, salt and bacon. In a small bowl combine egg, evaporated milk, vinegar and melted butter. Add all at once to flour mixture and stir just until moistened. Turn batter into greased 8" square cake pan. Bake in moderate oven (350ºF) 40 to 45 min or until done. Cool 10 min. Remove from pan. Serve warm with maple syrup.
