2 strips pork tenderloin (3/4 to 1 lb each)

Stuffing
3 slices white bread cut into small cubes
1/2 tsp sage
1/2 tsp salt
freshly ground black pepper
pinch of cinnamon
1 small onion finely chopped
1/3 c raisins
1/4 c butter
6 slices bacon cut in half

Directions:
Directions:
Make a lengthwise slit down the center of each tenderloin leaving a "hinge" on the bottom. Open out and flatten each piece. To make stuffing combine bread and seasonings. Saute onion and raisins in butter until onion is transparent. Add to bread mixture and combine well. Place stuffing on cut surface of one tenderloin. Top with second tenderloin and secure with string. Layer bacon strips on top. Bake in a 325ºF oven for 1 1/4 to 1 1/2 hours.
