Russet potatoes

Using old potatoes peel in the usual way and cut into even sized pieces. Cook in salted water for 5-10 minutes - depending on the size - and then drain well.
Place in a roasting tin near top of a hot oven (425 degrees) and sprinkle well with oil. (Olive oil nicest but you can use vegetable oils too). Bake for about 20 minutes, and then turn them and continue cooking until soft inside and crisp and brown outside - about 40 minutes altogether. Serve sprinkled with salt.
